Chocolate Avocado Pudding

When in doubt, add avocado!

I’ve adapted this recipe from Julie Montagu’s cookbook, Superfoods Superfast: 100 Energizing Recipes to Make in 20 Minutes or Less to include seasonal berries and almond milk. It’s perfect for those times you want to indulge in a decadent chocolate dessert without completely undoing your workout. Further proof that adding avocado makes everything better!


1        banana
1/2    avocado, peeled and stoned
1/4    cup ground almonds
4        tablespoons maple syrup
1         tablespoon raw cacao powder
1         teaspoon vanilla extract
1         teaspoon lucuma powder
1/2    tablespoon coconut oil

I like to modify the original recipe by adding a few raspberries and a splash of almond milk.

In a blender or food processor, blitz all of the ingredients into a creamy paste. Spoon the contents into two separate jars, then place in the freezer to set for about 10 minutes before serving.
