Strawberry Oat Bars
This is my all-time favorite summer snack, care of Clean Slate: A Cookbook and Guide: Reset Your Health, Detox Your Body, and Feel Your Best.
Not only is this recipe is vegan-friendly and majorly delicious, but best of all, it doesn't require any baking!
Makes 6 bars
You will need:
1 1/2 cups pitted dates
1/4 cup raw macadamia nuts
2 tablespoons old-fashioned rolled oats
Pinch of sea salt
1 cup organic strawberries, hulled and thinly sliced
Pulse the dates, nuts, oats, and sea salt in a food processor until just combined. Press this mixture into the bottom of a 9 x 5” loaf pan. Mash half the strawberries with a fork and spread over the the date mixture. Top with the remaining strawberries, then slice into rectangles and serve. Voila! No muss, no fuss.
